Fettuccine Alfredo Recipe

A really good Fettuccine Alfredo recipe is hard to come by. Most recipes are so bland that you feel like you are eating just plain pasta. Kinda gross, in my opinion. And, if you cheat and buy a jar, they are so full of salt and preservatives, that it's just nasty! I made this recipe, by combining 2 different Alfredo recipes. My husband loved it so much, even telling me that it was the best Alfredo that he's ever had! That's saying something, considering that he used to work in an Italian restaurant! My a.m.i.l. said that she loved it too, and she's an Italian food nut! So, I must have done something right! Here's the recipe!

1 box fettuccine
4 Tbs. butter
1 container of shredded (not the dried stuff you put on top of spaghetti) Parmesan cheese
(yes the entire 6 oz, or more)
2 C. of cooked chicken ( I used the left over grilled chicken, that hubby made, from the night before)
2 TBSP minced garlic
1 1/2 cups half & half, warmed
1 tsp. pepper
dash of salt

Cook the fettuccine noodles according to package directions. While the pasta is cooking,  melt butter over medium heat. Add garlic and saute for about 1 min. Add the chicken to heat. Add the half and half and mix well. Whisk in the Parmesan cheese, and whisk until all lumps are gone and sauce is heated thru. Add salt and pepper. Serve over the cooked pasta.
